Breakfact Egg Cups
If your mornings are anything like mine, than you know how crazy they can be. With three kids, my husband, a dog, two cats, and myself getting ready for the day can get nuts. Breakfast is not on my mind. Now, don't get me wrong I ALWAYS make sure that my kids eat before heading off to school, but it is me that usually ends up skipping "the most important meal of the day". So this year I decided to make a change.
This year I decided to not make a New Year's Resolution per say, but small New Year's goals instead! Small goals are WAY easier to achieve than a big change; and like they always say small things lead to big things!
I will not delve into all of the goals that I have for the 2017 year, as more come to me each day, but I can tell you one and that goad is Meal Preps!!
Okay, I know this might scare some of you, but really its not so bad. When my husband was away over seas I did a TON of this and it helped me out majorly!!
If you are like me, you do a lot of your major house hold grocery shopping once a week. So why not simply keep going by doing some meal preps along the way.
Here is one meal prep that can make a crazy morning go just a bit smoother for everyone, and it helps out majorly with making sure you eat breakfast. These Breakfast Egg Cups are the perfect thing to get the day going. I love that they can be custom made for each individual taste.
Here is what you need:
6-8 eggs beaten with 2 Tbsp of milk or half and half
Any veggies that you like
Any Cheese that you like
Any Meat that you like
Pepper
Really anything that you can think of you can put into these cups. Think of them as mini muffin omelets. I also used a Silicone muffin pan, that I LOVE (see my review of this pan here), for this dish, but you can use a metal pas as well. No matter what pan you use, make sure that you generously spray with cooking spray to ensue that you egg cups don't stick.
Next, add any ingredients that you like.
The ones shown in this picture is made with sweet peppers, green onions, ham and cheddar cheese. I was cleaning out my fridge and wanted to use some things up.
Now, beat the eggs with about 2-3 Tbsp of milk or half and half and pepper to taste. I did not add any salt since I had ham and cheese which is salty enough.
Pour the egg mix over each muffin cup and bake at 400 degrees F for about 20-25 minutes.
Allow the egg cups to cool about 5 minutes before removing. Since I used a Silicone pan my egg cups popped right out. This recipe made 12 egg cups.
Store in an air tight container in the fridge for up to 7 days. When you are ready to eat, simply pop in the microwave for 30-45 seconds.
These are so amazingly good and I can tell you that the DID NOT last a week, they barely lasted 3 DAYS!! My family LOVED them. I love that this recipe is so vestal. You can really make them however you want. My oldest daughter loves these with egg whites instead of the whole egg and my husband loves everything in them.
Having these all ready made is a great way to make sure that everyone eats before heading out, myself included. They are also great to pack and take to work.
I know it doesn't seem like much, but it is the little things that lead to big things and this is just one little thing that I know will help everyone out.
