Homemade Crunchy Granola






So we are 10 days into the new year and I know that I for one and super happy about still keeping my new years resolution.  I know, I know it is still very early, but I have never felt so good and knowing that I like this feeling makes me want to stick with it even more. 

I made a resolution to get in better shape mentally, physically and emotionally.  I started doing P90 and LOVE this program.  I feel so good after these workout and they only take 30 minutes to do, so it does not take my entire day to get in a great work out! 

Along with this I am trying to eat better.  Now, I am not talking about going on some crazy diet or starving myself or anything like that.  I am talking about just eating better.  Laying off junk food and eating a bit healthier.  That means KNOWING what you eat!

Don't go crazy with scrutinizing every little thing, but just know what is in your food.  There are a lot of foods that you can make at home that are just as good if not better and you KNOW exactly what you put in it.  These are the foods that I love, and this recipe is one such food.

I love yogurt, but sometime it can get boring.  Now add some crunch to that yogurt and I am all over it.  So, when I was able to make my own granola I was super excited.

This granola is so yummy and crunchy that you are going to want to make it over and over again.  It is perfect in yogurt, added to Homemade Trail Mix, mixed with dehydrated fruit, or anything else your imagination can come up with. 

Just because it is good for you doesn't mean it has to taste bad.  Remember little changes can lead to big changes, so why not start with one thing.

Here is what you need.

1 cup old-fashioned oats
1 1/2 cups rice krispie cereal
2 tablespoons packed brown sugar
1/4 cup water
1 tablespoon honey
1 tablespoon light corn syrup
1/2 tablespoon canola oil

Preheat the oven to 325 degrees F.  Line a baking pan with either nonstick cooking spray or parchment paper.

In a medium bowl, stir together the oats and cereal.


In a small pot, add the remaining ingredients and cook over medium-low heat until the sugar mix begins to boil.  Make sure to stir frequently.




Continue to stir for another 2-3 minute to ensure all is mixed well.

Pour the mixture over the cereal mix and toss with spatula to coat all the oats and cereal.




Spread evenly onto the baking sheet.




Bake for 30 minutes, stirring every 10 minutes to break up any large chunks.




Allow the granola to cool before breaking up any large chunks.  Store in an air tight container until ready for use.
